Chef Rich's Recipe of the Month

Apple Cider Chicken
2 Tablespoon Olive Oil
2 Tablespoon Butter
4 Boneless & Skinless Chicken Thighs
Salt & Pepper to taste
½ Medium Chopped Onion
1 Granny Smith Apple Sliced
2 Teaspoon Chopped Garlic
2 Teaspoon Chopped Thyme
2 Bay Leaves
¼ Cup Flour
1 ½ Cup Apple Cider

Season chicken with salt & pepper.  Dredge chicken in flour.  In a large skillet, add oil and butter.  Once hot, place chicken in pan and brown on both sides.  Remove chicken from pan and add flour, then whisk together.  Add apple cider and simmer for 3 to 5 minutes.  Allow to thicken, then replace chicken in pan and simmer 5 minutes.  Allow to rest in sauce for 5 minutes.   Enjoy!
